Sidamo, Ethiopia - Organic & Fair Trade Coffee

Coffee was first discovered in Ethiopia in the 1500's. In the nearly 500 years since, growing methods have remained largely unchanged. Approximately 95% of all coffee comes from small farmers, each producing an average of 300kg (5 bags) per year. The remaining 5% come from government owned or private plantations which utilize modern farming techniques.

The Sidamo region in southern Ethiopia exports mostly garden grown coffee both washed and unwashed coffees. After the harvest, farmers deliver their cherries to a washing station where fermenting and depulping occur. The coffee is then taken in parchment to the central store in Addis Ababa or Dire Dawa for grading and auction. Exporters purchase desired qualities and perform the final processing and sorting prior to shipping.

Natural Processing: After being harvested, coffee beans are cleaned and placed out in the sun to dry. It may take up to four weeks for the cherries to dry to their optimum moisture content, depending on the weather. The drying operation is the most important stage of the process, since it affects the final quality of the bean. An over-dried bean will become brittle and break down during the hulling (and broken beans are considered defective beans). A moist bean is prone to rapid deterioration.

The Heirloom: When a coffee bean, or any piece of produce, is said to be of the Heirloom varietal what it really means is that it's cultivated or grown much less frequently than other varieties. So you can consider these beans to be grown...in the wild! (Relatively speaking of course).
