Journey to our southern neighbors with this medium roast and experience some of the world's most valued coffee. Even as the sixth largest producer of coffee globally, Mexico's harvesting practices have remained consistent since coffee was first cultivated in the country during the 19th century. In fact, the vast majority of the regions coffee is grown by small, organic farmers tending to the hallowed ground like that of Chiapas--host to revered Mayan ruins and where human occupation dates back to 1500 B.C.
Based in the southern-most region of Mexico, Roastmaster's Select Mexico Chiapas comes straight from Majomut----an association of farm cooperatives of 1,000 coffee-growing families in 35 Tzotzil and Tzeltal indigenous communities. These families operate as completely Certified Organic; a practice they value not only for the absence of chemical fertilizers, but because it allows them to care for the land like that of their ancestors, fostering an intimate connection between nature and farmer.
Washing Processing: Washed (wet-processed) coffee goes from harvest to the mill, where the cherries are sorted and processed through a series of steps. The first step submerges the cherries in water and the unripe cherries float to the top and are removed. The cherries are then sent to the depulping stage which removes the skin and the pulpy layer beneath it. After processing, the beans then go to the fermentation stage that softens and loosens the mucilage so it can be removed. In the final step, the beans are spread out on a patio and dried by the sun. When dried, the beans are ready for sorting, grading and bagging.
Bourbon: Grown in higher altitudes, this coffee plant has a small and dense cherry characteristic with excellent cup qualities. Bourbon plants generally have broader leaves and rounder fruit and seeds than Typica varieties. Stems are stronger and stand more upright than Typica.
Caturra: These plants are a direct mutation from Bourbon plant and produce leaf and fruit characteristics similar to Bourbon varieties and can produce red or yellow cherries.
